1 tbsp of coconut shreds
4 big tbsp of chia seeds
3 1/2 dl coconut milk
A pinch of cardamom, a tbsp of cinnamon and tbsp of maple syrup
For the chia pudding
Soak 4 big tbsp of chia seeds in 1/2 dl water and 3 1/2 dl liquid coconut milk (if you are using canned coconut milk then make sure it's mixed well so that the solid and liquid is mixed completely). Add a tbsp of cinnamon, a tbsp of maple syrup and a pinch of cardamon. Let it soak over night (min. 8´6-8 hours). Stir it well!
I don't use a blender for this recipe, I use an electrical hand-held mixer because i like the fruit-mixes to be a bit chunky and not too smooth
For the kiwi-mix
Blend 5 kiwis with 4 dates and 1 banana
Add 1 big tbsp of coconut shreds and stir
For the mango-mix
Blend 1 mango with 1 banana
Assemble it in 2 transparent glasses by adding the 1/2 kiwi-mix at the bottom, then 1/2 of the chia pudding (made from the day before) and top it of with 1/2 of the mango mix.
You can top it of with more coconut shreds, kiwi or cacao nibs!
