One of the things that I get asked the most concerning my plant-based diet is "Isn't it difficult being plant-based?". I think that this questions stems from a belief that eating plant-based takes more effort and that it is time consuming. The truth is that being plant-based can be as easy as YOU make it or as difficult as you make it.
The same goes for eating healthy in general. It all depends on what you do to plan ahead and what steps you take to make this lifestyle easier for your life. Think ahead and plan for whatever your day/week looks like.
One of the things I do to make this lifestyle easier for myself anf my busy life is: FOOD PREPPING!
Usually on sunday (or monday) I go groceries shopping for my essentials for the entire week (sometimes I shop during the week as well, for little things I might need). After I shop, I food prep. By that I mean, I prepare some food that I store in containers in my fridge to that I can easily make lunch or dinner when I'm in a hurry. I usually also make a big batch of e.g. Chili sin carne and freeze it.
Of course I prepare bigger meals that I enjoy with my friends and family but on regular busy days, I will just throw a quick bowl together. By having prepared some staple foods in my fridge, it makes things soooo much easier for me to live healthy and plant-based. I can literally make a delicious nutritious dinner in 5 min!
Here's what I prep:
(Cut and wash)
BBQ marinated tofu or tempeh
Homemade Coconut Yoghurt
It might take you an hour or two to prep this on a sunday but it will save you so mcuh time during the week - it will make your life so much easier.
