Happy friday! The week has just flown by and I've been busy busy busy. During such weeks I love to cook a big batch of "something" on a sunday and then have it for lunch/dinner throughout the week. It's easy, it's less time consuming and it allows me to use my time wisely (not always in the kitchen).
Sometimes I cook a big batch of chili sin carne or plant-based bolognese but today I thought I would show you another option! DAHL!
Dahl is an Indian dish with lentil - it's comforting, healthy and easy to cook!
1 tbsp olive oil
3 cloves of garlic
1 tbsp chopped ginger
1 tbsp tumeric
1 tbsp graham masala
1/2 tbsp Cumin
1/2 tbsp Chili
1 can of chopped tomatoes
1 can of coconut milk
200g red lentils
350 ml veggie broth
3 small cups of frozen veggies (Optional)
3 cooked big potatoes (Optional)
Garnish with: Parsley or coriander and coconut yoghurt
And voila! Delicious dahl! I add the frozen veggies and potatoes to make it extra filling but that's optional (you could basically add whatever "extra" you prefer). Serve it with rice or on it's own.
